Spelt is one of the oldest cereal crops cultivated by man: used for its nutrients since the Neolithic Era, it was imported in Italy from Greece and it is the standard ration of the Roman Legions that expanded throughout the Western World. Important as it was, however, it was difficult to work and produced low yields. In the centuries following the fall of the Empire, higher-yielding grains were developed and Spelt's cultivation dwindled. Thanks to its excellent nutritional values, Spelt is now cultivated all around the world and has found a new market as a health food. Spelt has had a remarkable success in Biological Agriculture due to the fact that it grows well in poor soils or hilly areas. Thanks to its protective exterior coat, Spelt is very resistant to cold, parasites, disease and weeds agents, therefore it does not require the use of pesticides or herbicides.
