Sbramatura or Glazing

This process has been subcontracted to a third party. It is necessary because Spelt retains its husk or protective casing even at the end of threshing, therefore requiring two separate grindings compared to just one for wheat. This processing phase, know as “sbramatura” or “glazing” is carried out with a machine that removes the outer husk of the cereal.

Pearl Spelt

Spelt is a "dressed" cereal, as the glumetta, external film grain, rich in fibre, is super tight and is not removed from normal refining cylindrical roller to which wheat is subjected, therefore it needs further processing. Pearl Spelt does not retain glumetta intact, it has a much clearer colour and it’s cooked in a lesser time because it can absorb water more rapidly.

The grinding process of Spelt is subcontracted to a third party and it entails the use of stone mills operated by an electric motor.

Spelt Pasta

The production of pasta has been subcontracted to a third party and it’s done by hand-craft, using bronze die plates and by drying at low temperatures.
