Land Preparation
The land where the Spelt will be sewn is prepared between July and August by ploughing; this land will be untouched until the sowing time.
In the sowing time, which in our case falls between mid-October and mid-November, the land will be broken up and levelled with a harrow.
Sowing
Once the harrow has been used on the land and when the latter is sufficiently dry in the first 10 cm of depth we sew our Spelt (Triticum dicoccum) with a mechanical seeder.
At the end of the sowing time we take into account both the humidity of the land’s surface and the weather forecast for the days following the sowing to decide whether or not it is favourable to carry out the compaction of the land’s surface.
Harvesting
The Spelt is ready to be collected in the month of July; for this process we use a harvester, a normal machine used for the harvest of wheat.
The threshing process of Spelt takes place in the warmest hours of the day, reducing the humidity present in the seeds and preserving the protective casing of Spelt. During the threshing the harvester must advance at a low speed and the rotation speed of the reel must also be limited.
Cleaning or Screening
The screening process consists of eliminating all impurities from the previous harvest of Spelt. For the removal of such impurities we usually use a vibrating sifter.
