Pruning is the process that prepares the vine for the new production and is carried out after the vine loses the foliage to enter the winter rest phase.
With the winter pruning, an attempt is made, as much as possible, to correct mistakes made earlier in the year and to re-establish uniformity in the vineyard.
The "spurred cord" pruning technique consists in leaving only 4-5 spurs of 2 buds, distributed evenly between one vine and the next; no spur should be left along the strain or on the area of curvature.
