For any company, the harvest represents the ending of operations in the field. The choice of when to harvest is a decision that is dictated from set objectives, in terms of the type of wines to produce.
The preset objectives define the level of maturation that the grapes must reach (acidity and sugar) and it is from here that begin investigations in the field, aimed at sampling the grapes in order to determine these parameters.
Another important factor that affects the harvest is the variable climate. Experience teaches us that we must always reach a compromise between the levels of maturity and climatic conditions that allow the harvest of grapes.
In general, the harvest is described as a time of great celebration, but we should remember that it is also a rather intense moment for all the workers engaged in it. The harvest requires great organizational ability, because the grapes must be harvested at the right time and processed as quickly as possible and, especially in wet years, achieving this goal is not easy.
